RAID 5 requires at least three disks and uses striping with parity, while RAID 10 requires at least four disks and uses a combination of striping and mirroring. RAID 5 provides better read performance with larger numbers of disks, but write performance is slower due to parity overhead. RAID 10 provides the best performance for both read and write operations, however it requires more total disks and capacity than RAID 5.
